Crafted Meals on the River

One of the great joys of our river trips is serving memorable meals. Our menu is built on quality ingredients and thoughtful preparation, with dishes suited for active days on the river. Sharing a well prepared meal in the wilderness brings people together, and we’re happy to share that experience with you.

Preparation and Suppliers

Our menu process begins long before we reach the river. We work closely with our suppliers and dedicate significant time to preparation before each trip. On our staff is a food manager whose sole focus is sourcing quality ingredients, prepping meals and mixes, and ensuring consistency across every trip.

The partnerships we form with our suppliers reflect our respect for the effort behind the food we serve. From selecting high-quality beef to sourcing local Salmon honey, we’re committed to working with as many Idaho-based suppliers as possible. Our Menu

While there’s always the staples that stay on the menu, we also continue to adapt and update our menu to achieve new flavors, but also fulfilling healthy options. Each meal is rounded out with a fresh salad, seasonal vegetable, or fruit, chosen to complement the main course.

A day on the river through our menu begins with fresh brewed coffee, followed by a dutch oven breakfast of egg strata and coffee cake, alongside sliced peaches and pineapple with yogurt and granola. Lunch features a Greek style spread with chicken, salad, tzatziki, hummus, and naan, while appetizers include a variety of dips and chips to share. Dinner includes smoked carnitas pork street tacos with Mexican rice and elote corn slaw, finished with dessert, plum torte.

Dietary Needs

We are more than happy to accommodate various dietary requirements. When you complete your trip registration form, please specify your dietary preferences, and our office team will follow up for any clarifications. We can accommodate common dietary needs such as gluten-free, vegetarian, and food allergies. For more complex dietary requirements, we might ask you to bring specific foods. Planning ahead is key, as our ability to make adjustments is limited once we are out on the trip.

Beverages and Wines

On our trips, we provide a variety of beverages, and guests are also welcome to bring their own specialty drinks or liquor if they prefer. Glass is not an issue for us. We provide a selection of sparkling waters, Coke, and Diet Coke. Alcoholic beverages include light beer, seltzers, Pacifico, and a variety of local microbrews.

We also serve a rotating selection of wines chosen to pair well with each meal, representing a range of styles and regions. Along with our wine, we provide ice each night for your cocktails if you brought your own liquor.
